Ingredients
- 500g potatoes peeled and quartered
- low-calorie cooking spray
- 1 small onion peeled and finely diced
- 1 chilli deseeded and finely diced
- 1 medium egg
- 1 tsp ground tumeric
- 1 tsp ground coriander
- 15g fresh coriander finely chopped
- 60g wholemeal bread blitzed into crumbs
- sea salt and freshly ground black pepper
- 1 tbsp mango chutney (optional)
- Place the potatoes in a pan of boiling salted water, bring back to the boil and simmer for 15 minutes until they are cooked. Drain the potatoes well, then mash until smooth. You can use a potato masher or potato ricer to do this. Set aside.
- Spray a small frying pan with some low-calorie cooking spray, place over a medium heat and gently fry the onion for 5 minutes until it begins to soften. Set aside to cool for a minute.
- Add the cooked mash, onion and the rest of the ingredients into a bowl, season with salt and pepper and mix well. Take a golf-ball sized amount of the mixture and gently shape into a small patty. Place onto a plate. Repeat until all the mixture is used, you should have around 16 patties.
- Spray the tops of the patties with low-calorie cooking spray and place topside down in the air fryer basket. Spray again with low-calorie cooking spray so both sides have now been coated. Air-fry at 180°C for 10 minutes. You may need to do this in batches, depending on the size of your air fryer. When done, they should have a nice brown colour on the outside.
- Serve warm or cold with some mango chutney for dipping, if you like.
